Biltong

Air-dried Australian beef, spiced to a traditional Southern African recipe, then hung, dried and sliced by us at Perth City Farm in East Perth.

High in protein and shelf-stable — it goes in a lunchbox, a glovebox or a backpack and doesn't complain.

Two styles

• Traditional — the classic coriander-and-pepper cure. Start here.
• Chilli — same cure with heat behind it. Our regulars' pick.

Sizes

• 200g — a week's worth, or one very good afternoon
• 500g — the sensible middle
• 1kg — best value per kilo, and what most of our regulars order

Keeping it

Biltong keeps best in a paper bag somewhere cool and dry, so it can breathe. If you're not going to get through it quickly, freeze it — it thaws with no loss of quality.
